The circle of life and a strawberry cake
I’ve been in Jordan for three weeks now and enjoying everything that is surrounding me, especially being around my grand mother, mother and daughter. Four generations of women ranging between ninety-six to two years of life. A circle of completion, a feeling of wholeness. Us four, each in her own world and yet somehow connected in some sort of life history and legacy.
Four years ago when I decided to buy an apartment in Jordan, I only needed to come into the kitchen and see the view from the window. In fact this was the first and last apartment I viewed. Sometimes one knows in life when something is just right. And It did turn out just that way.
This cake came about when my hubby called two days ago saying.. ‘you must write another post’..’bake a cake’ ‘make something’. His sweet enthusiasm beckoned me and I decided to experiment with a strawberry layered cake.
My little daughter’s birthday will be in less than a month and needed to try this one out. To be totally honest, I just wanted to make a summer strawberry cream cake.
The sponge part of the cake is adapted from Ina Garten’s 4th of July sponge cake. My adapted version is filled with strawberries and smothered in whipped cream. Bon Appetit.
- 1.5 cups flour
- 3 tble spoons corn flour
- 1 cup sugar
- 6 tble spoons butter
- 3/4 cup yoghurt
- 1 tsp bi carb
- 1/2 tsp salt
- 1 tsp vanilla essence
- 2 cups whipping cream
- 200 g fresh strawberries
- 2 tsp apricot jam mixed in 3 tsp water
Pre heat the oven at 170C. Cream together the butter and sugar until fluffy. Add the eggs one at a time, then vanilla then yoghurt. On the side sieve the flour, bi carb and salt and add gradually to the egg mixture. Do not over the batter. Place in a buttered 8 cm cake tin and bake for half an a hour. Cool down and cut in half. Beat the cream adding some sugar and vanilla essence according to taste. Cut up some of the strawberries adding 2/3 tsp of sugar. Place the strawberries on top of the cake layering with cream, cake then cream and halved strawberries.
