A Mascarpone Bundt Pound Cake
There are a lot of things that I cook that escape this blog, partly for the lack of time and partly for the lack of space of mind to take photographs, upload them and write about them. But here I am back in Dubai, a month late, never the less in time to get back to teaching, schooling my child to nursery and to getting on track in every way possible. This lovely cake was baked in jordan less than a month ago.
It was inspired by this lovely and genuine blogger called Guilia. ‘Jul’ as known from her blog cooks and writes from the heart in her native Tuscany. This cake is everything a pound cake promises and more. The more part is a result of the mascarpone used in the cake. It moistened the cake and pleased guests and loved ones all around. In the original recipe Jul uses fresh strawberries in the actual cake, I decided to use strawberry jam instead and a bundt cake mold to come up with a different look and feel to it.
