Maple Glazed Granola with Fruit

I am one of those people who is always in search of a dish that is satisfying and healthy, not the other the way around. Can you relate to that? Are you one of those always trying to create that little bit of a naughtier options in what you eat?. In my case if I am having a salad, I would go for a grilled and warm goats cheese salad instead of plain greens. If it’s an option between choosing lettuce and avocado, I, without hesitation will go for the avocado…. and the list goes on..
So the story with oats is: I love them. I enjoy eating the occasional hot bowl of porridge in the morning… however I realized that oats could do better than just being dissolved in milk. They needed to stay true to themselves and show their toasty side, if you know what I mean!. This maple glazed granola, combined with greek yoghurt and fresh fruits is both satisfying and healthy. It is the first time I cook it and it wont be the last. You can truly add any nuts of your choice. I happen to love almonds and desiccated coconut and therefore used those.
Method
Heat the oil in a non stick, oven safe pan, add the maple syrup, nuts, coconut, oats and toss together. Transfer the pan to preheated oven at 200 C and cook for 5-8 minutes. Keep moving the mixture until all is toasted and make sure you keep checking that the mix is not getting over cooked!. Keep in an air tight container and consume within a few days.

- 1 table-spoon grape seed oil
- 3 table-spoon maple syrup
- 50 g almonds
- 100 g porridge oats
- 40 g coconut
- yogurt and fresh fruits

BTW I always prefer satisfying and healthy although I times I am not sure how healthy my options can be, but they are usually yummy, so YES one of those people 🙂
