A Pumpkin Flan
I tend to know a good recipe when I see one. This flan was one of those very inviting things to try out – how could it not be when created by Ina Garten and rendered by master blogger David Libovitz. I am not a huge fan of pumpkin pie and when Libovitz sang this flan’s praise and compared it to the Tres Leches Cake, I knew it would be a few days before I try and make it. If you enjoy Creme Caramel, you will most likely enjoy this one too. It is very much based on that with the added texture of cheese cake due to the use of Mascarpone.
If I were to make it again, I would make sure I stick to the exact quantities Libovitz writes because like him I wanted to make use of the whole pumpkin puree and ended up doubling everything and using extra ramekins which meant adding an extra egg. Do consume as soon as refrigerated so it remains fresh and less eggy in smell. I would also sieve the custard in order to get a smooth finish before moulding.
